Cheap and Cheerful Cooking: BBQ Chicken Salad
This is a yummy salad we make when we have assorted leftovers -- a few chicken breasts, some corn on the cob, and romaine lettuce, plus bbq sauce, ranch dressing, red onion and cilantro. It is super easy to put together -- grill the chicken in a skillet, saute the corn and red onion in another skillet, and toss the cilantro on top of the corn and onion at the end. Then, toss the chicken in a little bit of bbq sauce, dress the romaine with a little bit of ranch dressing and combine. A little yummy bbq chicken salad.
